What is in a Plan?


Hi friends,

I mentioned the other day that I was going to try meal planning. Here is my first attempt.

Some people seem to have a knack for meal planning but I'm not one of them. I will see how it goes this week with the plan. One thing that I can see will be a benefit of  a plan is that the grocery shopping list will come together more quickly in the sense of you know what you will need to buy. What I'm not sure about is how much I can take advantage of sales.  The other benefit to a plan is though you need some time to prepare it, you don't have to do much thinking during the rest of the week as your plan will guide you.

If I continue with meal planning I will need to synch my plan with sales flyers in future. I'm not sure how this will work in terms of timing and scheduling to 1) shop the flyers 2) make the meal plan and 3) draft a list of things to buy. All this is something I will need to learn as I go. Sounds silly after shopping, planning and cooking on the fly all these years.

Really what I'm attempting to do is streamline things but I am not the type that likes to write everything down every day. I guess the beauty of a weekly plan is you create it once a week and after awhile you have a repertoire that you simply repeat and shift around. Also, within the plan you can switch the menu between days as long as you have your ingredients on hand.  But this approach is vastly different from my usual approach which is to shop the sales and create meals around that. I just find this approach isn't working quite as well as it used to because a lot of things that used to be on sale are much more expensive now. A different approach is needed. Also when I see meals for a few days or a week ahead, I can try to balance things out a bit more in terms of getting good nutrition.

In the past (and hopefully into the future) I purchase a roast or two and try and portion it out for different meals in a given week.  I don't necessarily have a lot of left overs as I might cut the roast in two or three parts and use some for a roast, for a stew and for stir fry, etc.  All this is probably old news to those of you who already do meal planning.

Right now I don't have any roasts in my small freezer but I do have a turkey so that features in several meals this week. It's a smallish turkey so it may not stretch quite as far but I'll find out. My freezer size and space limitations also mean I cannot stock pile meat when it is on sale like many people seem to do. For that matter, I can't make meals ahead and freeze them.

Dinner – Roast Chicken Thighs/Legs; Baked Brown Rice with Celery & Onion

Snacks – Mixed nuts, 2 chocolate pieces

Friday
Breakfast – Lemon-Cranberry Muffin, Coffee
Lunch –n/a
Dinner – Stir Fry of Kohlbassa Sausage/Apple/Savoy Cabbage; Baked Barley w/Onion Soup Mix, Kale/Carrot/Raisin salad
Late snack - sandwich with left over meat

Saturday Breakfast – Lemon-Cranberry Muffin
Lunch at friend’s – surprise meal but likely vegetarian
Dinner – Baked Lamb w/mushrooms, onion, small potatoes, braised green beans, romaine lettuce/tomato/feta salad
Snacks – yogurt w/banana

Sunday
Breakfast – Hot Cereal with nuts & goji berries, coffee
Snack (My contribution to Church Fellowship) – Smoked Black Bean Dip w/tortilla chips and/or baked pita chips
Lunch – 2 Boiled Eggs; tossed green salad
Dinner - Roast Turkey & Stuffing; Green Salad, Sweet potatoe

Monday
Breakfast – 2 poached eggs, few spoons of yogurt w/flax, coffee
Lunch – Turkey Salad Sandwich (cold), tossed salad
Dinner – Penne Pasta with stir fry vegetables (onion, garlic, carrots, mixed peppers, eggplant)

Tuesday
Breakfast – Muffins (cranberry & Nut), coffee
Lunch – Potato Leek Soup, pears
Dinner – Turkey Salad or Hot Turkey Sandwich & Sweet Potato, tomatoes/English cucumber

Wednesday Breakfast – Hot cereal with nuts/goji berry, apple, coffee
Lunch – Leftover soup/s, carrot & celery sticks with peanut butter
Dinner - Quinoa casserole

Thursday
Breakfast – Hot cereal with nuts/goji berry, apple, coffee
Lunch – Tuna salad with fruit or Corn Chowder
Dinner – Grilled Steak, mushrooms, brown rice with green beans

Friday
Breakfast – Hot cereal with nuts/goji berry, fruit, coffee
Lunch – Veggie soup or soup made with leftovers, fruit, yogurt
Dinner – Basa Fish Fillets, mixed vegetables steamed, apple crumble ?

Snacks – apples, bananas, smoothies, muffins, nuts, yogurt

Notes:  After I sit back and see my plan I can see I have too many carbs. This is my usual issue. I will either turn my sandwiches into salads only, substitute a lettuce leaf for a slice of bread or use sandwich filling on one slice of bread only. Goji berries are a wonderful berry that has many health benefits and help with strength and longevity.  But you need to be careful as with all things natural there are potential side effects. If you take blood thinners, have dangerously low blood sugar readings or have blood sugar issues you should do more research and speak to your health care provider before using goji berries.

Out with the Old, In With the New

Hi friends and newcomers, welcome!

This verse is a comfort to me today as I move forward in the New Year with all it's possibilities.


Behold, I will do a new thing; now it shall spring forth; shall ye not know it? I will even make a way in the wilderness, and rivers in the desert.
Isaiah 43:19

I hope your new year is off to a great start. Mine has started out a bit slowly and in a bit of a funk. I was gentle with myself and didn't push myself to do things I didn't have to.  Since I am never able to do nothing much for very long, I also did a lot of reading and a bit of shopping.  The shopping was done at the end of last year and beginning of the New Year to help me get 2015 off to an organized start. I have some goals this year for my spiritual life, my physical being, my home and my relationships. I also have a theme word or a guiding word for the year "joy". This is to help me look for joy in the world each and every day. Sometimes I might share those moments with you here on the blog.

Those of you who have been reading me for years might recall that I go through frequent times of purging my possessions. When I need to replenish or renew them I try to do it in as frugal a way as possible. These actions relate to my personal goals of keeping things organized and tidy, financial goals to reduce spending and also spiritual goals to help on the mission field (read more at my Work in Africa page at the tab on the top of this page).

Purging at the end and beginning of the year happened again when after Christmas I realized that my pillows are well over 20 years old. I can't imagine all the dust mites in those pillows after all this time as they were not washable. I did keep them covered with washable pillow protectors and aired them out every now and then.

The pillows were still supportive but looking worse for wear. I'd been thinking of replacing them for some time.  This year I finally did it. I ordered them on line which is always a bit dicey but they were a good price.  Basically two for the price of one.  While they are not my best pillow (that is one I'm throwing out), I'm  happy to say they seem to be working out fine. If I think back over the past week or so I think perhaps I am also sleeping better too which is one of the claims made by the pillow's inventor. I will have to keep alert and see if the better sleep (not waking up so often through the night) is a long-term benefit.  I can now throw out my old and well worn pillows.

The new pillows are washable and that is a bonus. I want to buy another two good quality latex pillows.  Of the two pillows I'm throwing out, one was latex and one was buckwheat. I would say they were both worth the price I paid for them way back when. I'll take my time looking for a good pillow replacement.

I've also replaced some cheap towels and a floor mat I had purchased less than 10 years ago. These are white towels that cost me only $1.99 each at the time. They now look rather dingy and gray and are starting to fray. The towels I had before were good quality ones that lasted over 2 decades. I'm afraid I was still using those with a few holes and frayed edges when I bought the inexpensive white ones.

My new towels and bath mat finally match my shower curtain which I've had for a few years already.   I now have white towels (2 bath) with teal trim and several other teal coloured towels in various sizes (2 hand towels, 2 bath towels and 1 bath sheet). I couldn't get any facecloths as they were all sold out but I will probably just look for some packages of inexpensive white and teal facecloths somewhere else. I tend to go through face cloths much more quickly and there is no way I will spend $4 or more on one face cloth.

So what else is in or out in my life?

Well for years I've been saying I want to try meal planning. I think it would help me to know in advance about what I will eat so I can prepare several days ahead with the food buying.  This way I hope to get a better handle on my blood glucose levels which are still not fully under control.

I've never actually tried meal planning for a whole week at a time and for some reason I don't find it easy to do. Instead I go to the store and buy whatever is on sale meat wise.  Then I purchase a lot of things to go with it (rice, pasta, quinoa, all kinds of beans and legumes & all kinds of vegetables).  Each day I think about what is going to be for dinner and sometimes I think several days ahead especially if I am going to be fairly busy and want to eat healthy.  This method works fairly well but lately I feel I could do much better and maybe spend much less if I sat down and had a plan of meals.  Plans always include breakfast, lunch and dinner and it is really Breakfast and lunch that I seem to have the  most trouble with.  Also, I have this idea that meal planning is going to require me to also look up recipes and learn new dishes so I can keep things interesting and thus the time factor puts me off a bit.

My first attempt at meal planning started last night. I'm not sure I'm comfortable with it.  I may have to start smaller than planning for a whole week.  It will be good for me to start with planning more for breakfast and lunch since I seem to be pretty good with the dinner menu. Maybe I shouldn't try to reinvent the wheel and just focus on planning ahead for breakfast and lunch and continue to plan dinners after buying whatever is one sale. That might work better for me. I'll have to experiment a bit so it might be awhile before I'm in a groove so to speak.

I've never been a breakfast person except for when I travel.  So I really do need to plan ahead for this meal.  It will  largely consist of one of  the following:  hot cereals with fruit, yogurt and fruit, combinations of egg dishes or yummy muffins. I don't eat bacon anymore largely due to the cost and heart health.  Though I would probably do better on a higher protein breakfast I don't often have meat left over from dinner.

Here is a good heart healthy and healthy weight muffin recipe that came with lots of rave reviews. The recipe is actually for Lemon-Raspberry muffins but I substituted cranberries since that is what I had in my freezer. I've made these muffins to have for breakfast every other day or so this week.



 Lemon-Cranberry Muffins * Rated as heart healthy & Healthy Weight

 

 Ingredients

  • 1 lemon
  • 1/2 cup sugar
  • 1 cup nonfat buttermilk
  • 1/3 cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white whole-wheat flour, or whole-wheat pastry flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups cranberries

Preparation

  1. Preheat oven to 400°F. Coat 12 large (1/2-cup) muffin cups with cooking spray or line with paper liners.
  2. Use a vegetable peeler to remove the zest from the lemon in long strips. Combine the zest and sugar in a food processor; pulse until the zest is very finely chopped into the sugar. Add buttermilk, oil, egg and vanilla and pulse until blended.
  3. Combine whole-wheat flour, all-purpose flour, baking powder, baking soda and salt in a large bowl. Add the buttermilk mixture and fold until almost blended. Gently fold in berries.  Divide the batter among the muffin cups.
  4. Bake the muffins until the edges and tops are golden, 20 to 25 minutes. Let cool in the pan for 5 minutes before turning out onto a wire rack. Serve warm.

Guiding Words for 2014

Hi friends, I trust you are all settling in to a New Year.

I love the changing of years where we say "goodbye" to one year and "hello" to another.  In recent years I've used it as a opportunity for reflection and planning.  A time to reflect on the year gone by to see what things went well and what things didn't go so well. A time to discover whether there are things that I have the ability to change or whether I need to "let go and let God". It is also a time to think about the coming year and plan and look forward to limitless possibilities.


If you have followed me for a few years you might remember reading my review of goals set for the year.  At the same time I consider whether I had to change my goals in mid-year, accomplished them or had to carry them forward for one reason or another.  I usually also plan and post my goals for the coming year in late December/early January.  This year however I felt the need to do something a bit different.



Instead of posting my goals publically I will be keeping them private. It isn't because they are so secret.  Rather I've just not been as passionate about blogging this past few months.  I still want to blog and connect with my readers.  At the same time, I want my readers to connect with me.  However, I'm trying to find a balance between the two objectives.  So I've started to blog less and visit blogs less often as well. {For now I won't be giving up blogging.}


It is all part of my desire to "simplify" and "streamline".

These two words will be my mantras for 2014. They will guide the goals I set for myself also.

I am a bit behind schedule in terms of what I've usually accomplished in the early days of the year.

But in keeping with my two words, "simplify" and "streamline" I've already spent a bit of time over the past several days doing just that.

Some of the things I've managed to accomplish in the early days of January:
  • simplify - made New Year's dinner with less variety of foods to enjoy and didn't invite anyone over for dinner. {While I did have guests over Christmas having a few days to myself to recover from sickness was less stressful because I didn't have to entertain}.
  • streamline ~ took down the Christmas decorations several days early. {I usually keep them up until January 2 but this year they came down on December 27th. I think this will be my new norm so I can start the year clutter free.}
  • streamline ~  Deleted duplicate and triplicate entries for individuals in my email address book.  {Some people accumulate excessive emails in a short space of time when they switch internet providers.   It's one good reason to simplify by using a free email account.}  
  • streamline ~  Got rid of old files and photos from my desktop.  {I should have done this sooner in preparation for installing Windows 8.  I have more streamlining to do from my hardrive folders & photo files.}

I hope that through more simplifying and streamlining there will be progress on the continual process of decluttering which is so necessary to living in a smaller space.  I also hope there there will be much more "me" time.  This "me" time is for reflecting on the deeper things of life and spending time on the things that are most important to me.  There will also be "me" time to take better care of my health.

Ch-ch-changes

Hello friends and fellow bloggers,



One of my goals this year is to use computer time more efficiently and effectively. Saving time in one area will help me spend more time in bible study, and general reading.  One of the things I've decided, is to reduce the number of blogs I follow, and also the number of blogs I comment on.  I've been subscribed to literally hundreds of blogs at any given time.  In addition, I participate in many weekly memes.

I've made it a practice to read most of the new posts on these blogs and memes.  If I take time to read a post, I also take time to leave a comment.  I've been doing this for years. As you can imagine, it takes a good chunk of time from my week but I do love to read and learn from others, and share a bit of myself.

I have no problem in doing this and for the most part have enjoyed it. However, I've decided it is time to make changes.

So along that vein, and with very few exceptions, I will no longer be commenting on blogs that I used to follow quite closely and blogs on which I used to be a frequenter commenter. I will also experiment with reading posts and not commenting quite as frequently.  This practice seems to be quite common. On my own blog, I no longer reply to every comment left for me. I used to reply as a matter of courtesy. However I'm not sure how many people come back and read the response and I've also heard it said that it annoys some people to no end. I will leave replies from time to time but more as an exception rather than the rule. That will save me time and hopefully annoy fewer people!

I have a blogging philosophy in which I try to "connect" with other bloggers and develop a bit of a relationship with them.  Relationship building requires something from both sides.

After years of visiting some blogs and hearing nothing, I've begun to feel like a voyeur and an intruder in the lives of people I do not know. People who write freely about intimate aspects of their lives or share freely of their knowledge but they never take time to say "hello, welcome to my world" or never come by to see what I'm up to. So I'm moving on.

With a few exceptions, I will be concentrating on following bloggers who take time to connect in some way.  I don't mean we have to become "pals".  I know everyone is busy. I am just saying let's show common courtesy and take time to encourage one another's blogging efforts through showing appreciation of each other's efforts from time to time.

I will continue to participate in weekly memes which I also love. However, I will again be limiting my comments to those bloggers that show reciprocity now and then then.

I do love blogging and reading your blogs. I get inspired, I learn something, I cry with you, pray with you, relate to you through your stories, want to "root for you", laugh with you, etc. I look forward to reading more of your posts and leaving comments or encouragement.   If I haven't visited you in the last few days please know I am a little behind due to family obligations but I will be by very soon.

I'm very thankful for those of you who do take time to come by and read my posts or view my photos.  You encourage me on my blogging journey.

The Last Major Hurdles

I do realize that the kind of blog post you are about to read may not be too exciting or thrilling to a lot of people.  But writing about it helps me to stay on track and accountable for the big decluttering project I am working on.  It is a tedious job with few immediate rewards so I need all the help I can get. Thanks for reading and giving me a platform to share my goals, challenges, successes....all of which are leading me to a simpler life and more time and resources for the Missions of Hope.
 
I have had a busy start to the New Year in an effort to get started on the right foot.  This past week I decided to take a little break from the decluttering project and have been busy doing other things like: catching up with friends, going to the movie, exercising, going to Sunday services and making notes of all the upcoming activities there that I would like to participate in during January/February, listening to past sermons on line, reading, organizing my medical appointments and paperwork, scheduling my upcoming commitments (including those that help me reach my goals in 2011) and following up on a number of things I've promised to do.

Then also this past week my mom had a major fall which you can read about here.  Last night she was admitted to hospital due to cellulitis infection.  Cellulitis is the bane of many senior citizens, especially those that are less mobile. She was heavily sedated all day due to pain but her nurse says she is doing much better now. We are not yet sure how long she will be in hospital but my brother and nephew will be attending to visit her and help her with her various needs while I attend to my own medical needs.

Now I'm back to the next big step in the decluttering process, the subject of this blog post which I've called,  "The Last Major Hurdles".  The hurdles are the table top, the dresser top in the bedroom and the big boxes in the bedroom, some of which are pictured below. Once I clean these surfaces and fully unpack the boxes I will have the hardest parts of my decluttering project behind me. I still will have a lot to do but the worst of it will have been done. Yippee!!!

The dining room table in the photo below is covered with clutter and tablecloths so you can't see but it is an antique table from Spain. I love it and it is special because my mom gave me the money to buy it as a birthday present many years ago.  Though my mother paid for it she never liked my choice of table and I am now going to get rid of it.  When I told her that some months ago, she said "Oh good!"  I would probably keep it were it not for the fact that the chairs need reinforcing every year due to their age and often they are not reinforced so they pose a possible danger to someone.  Otherwise, I love the table. Partly because of it's heavy and ornately carved legs.  I also love it because the table top has leaves inserted under it and you can pull them out when you have a sewing project or you have a dinner party.  This adds about 5 more surface feet which really helps when you want to cut fabrics or set out food and dinnerware which I do for buffet style dinners when entertaining.


Clutter on the tabletop. empty coin wrappers in the bag and important papers in a  wooden box on the floor. The table area is nice and clean from time to time but I'm afraid it acts as an expensive catch all most of the time.  Once I clean the the table I will find a new home for it. In fact, I've already ordered a new, small round table for the dining table.  I think it will work much better in this space.

Two big unpacked boxes remain from the move in we did just over a year ago post-fire. I've had a quick peek inside and put a lot of the items to sort on the top of the dresser which is adjacent to the boxes. Things look rather messy in the master bedroom at the moment but it is surface mess until everything is dealt with.

Update:  I stayed up late and cleared the table.  A small bag of garbage was thrown out and bills and paperwork added to other like documents which are to be sorted and dealt with later. First pass through the paper is getting rid of anything no longer needed.  It feels good to see the table again.  Next it will need to be polished before I see who might want to give it a good home.

Getting Started on the Right Foot

Hi friends and fellow bloggers,

I've been silent for awhile. That isn't like  me. But everything is okay. I have just been very busy trying to get organized for the new year so I can get started on the right foot. Also, to be honest, I haven't felt up to blogging. I feel I have too much to say and I have no idea where to begin. So I simply stayed quiet for a few days so I could focus on some other tasks.

Some of you know that last year I began to work on a number of projects after being sick for several years and not being able to do too much. I haven't much experience with written goals but in the last two years or so I've found it is one way to help me keep on track and try to focus on those things that are most important to me on those days when I actually feel up to doing things.

I shared my goals for the first time here on the blog in  2010 and I'm happy to report that I was able to accomplish almost everything on my list over the course of the year. At the same time, I stated in early 2010 that due to my illness,  I was not going to pressure myself with deadlines for accomplishing my goals in 2010.  Whatever didn't get done in 2010 would simply be carried over to the next year.  I have now identified my goals for 2011 and posted them.  But again, I am not putting pressure on myself to reach all of my goals. I will do what I can and carry over anything left undone to the next year and so on.


I have a huge decluttering project that has been underway for some time. I do make progress on it from time to time but there is still much more to be done. This is really a project in learning to live more simply and scaling back on the material things so that I can focus my time and energy on things that are more important to me. Unfortunately, this isn't as easily achievable for me as it is for some people because I am a pack rat at heart.

I do tend to accumulate things and I have this idea when I come across something that I can always read it later, use it later or even give it to someone who needs it.   Often however these things end up collecting dust and becoming clutter. I know it will take time to achieve my goal of decluttering and simplifying but I am sure it will happen if I continue to plug away at it. One thing that motivates me in this area is the fact that my mom is also a clutter bug but unlike me she has never really organized her clutter. Now that she is too sick and disabled to do anything for herself, I find myself having to attend to it for her and this has been a huge burden on me. Doing so however has forced me to be ruthless in getting rid of things and has also helped me to think about being ruthless in streamlining my own possessions.

Just before the world rang in the New Year I began working in earnest on my big decluttering project. I cleaned out my dresser drawers and my closets and threw away a garbage bag of tattered clothes/  I also put together 4 large shopping bags of clothes for give away and  went through several boxes and bags that hadn't been unpacked since the fire we had over a year ago.  I was able to shred and discard so much of it. I also made some progress in cleaning the master bathroom and finding some spaces for the overflow of bags/suitcases I have in my bedroom.

In the main living area, the slipcovers for the sofa and arm chair were washed and mended.  They look much better now. I moved my armchair from the window wall so I could put my stationary bike in its place. I also moved my weights closer to my bike and found a space for my Swiss ball and yoga mat in the corner of the living room.  This means I will use my living room for a work out room.  Hopefully this will help me be more consistent about working out, getting healthy and losing weight as I spend much of my time in this room. So far I have managed to do my cardio exercise every day of the new year. I am keeping things simple and starting off with 20-30 minutes daily on the bike and hope to do resistance training every other day or so. The idea is that once I feel a bit stronger and have more endurance I can increase my exercise time. I also hope to get back to my swimming lessons which were at a bit of a standstill due to family responsibilities, Christmas and travel.

I can watch TV from this perch. Hopefully that will help keep me consistent with the bike.
I am also determined to make more time this year for bible study and have been researching new study aids and bibles. If any of you have recommendations (along with reasons for your recommendations) please send them my way.

In terms of my hobbies, I haven't had so much time for them. I am just trying to get my books out of nooks and crannies and place them in readily accessible places. I am talking here of books that don't fit onto my crowded bookshelves. These days I mostly buy second hand books and I borrow books whenever I can. That way when I have finished reading them I can pass them along without feeling any reluctance. Of course I return borrowed books to my friends.

Recently, I finished reading Crime and Punishment by Dostoevsky and am currently reading a number of other books at the same time, including Véra by Stacy Schiff and A Suitable Boy by Vikram Seth.   A Suitable Boy is a book I started a long time ago but put aside because it was packed away after the fire. I am happy to begin reading it again but have decided to start once more from the beginning to enjoy it more fully.  Véra .is about Véra Nabokov; the wife, muse and translator of Vladimir Nabokov who translated Dostoevsky into English.  Vladimir Nabokov is also the author of the controversial book and movie of the same name, Lolita. I am finding that I am learning a lot about both Nabokovs through the book about Véra.


Right now I have two 6 foot high bookshelves which are full of books and there is an overflow of books in the living room and bedroom. When I buy books at full price, I tend to want to keep them for later reading and that is why I have altogether too many books. My goal is to scale back my books as I read them and give them away so that I never have more books than will fit on my two bookshelves.  Perhaps when I get to that point I can make a new goal to scale back even more.  That would be ideal.

As far as other hobbies go I intend to continue to make doilies, experiment with embroidery, make a garment or two for my mom and continue to knit.  Hopefully I can perfect my slipper making ability as well as learn how to make basic sweaters.

Rounding out my goals for the year are plans to save for emergencies and wants, pay down debt and get control of my spending. This is no small task as most of you can imagine. I did make significant progress on similar goals over the past year or two and I'm sure I will continue to do so in 2011. I also have plans for being a good sponsor mom to my two boys in Kenya. I will be writing them letters and sending little things to them in the mail. In addition,  I have some small projects I am involved in in Kenya as my desire is to help widows and orphans in a few villages.  Of course I also have family here at home that I need to engage with and help in various ways. One of those ways is helping my mom to get settled in the nursing home when her room becomes available. In talking to the home today it sounds like they are taking all the right steps in readiness for mom's arrival. It is difficult to say exactly when the move will happen but my hunch is that it could be very soon.

As you can see things have been busy for  me as I gear up to make the most of 2011 and get things started on the right foot.  I must say I am looking forward to 2011 and I pray that you and your household are also looking forward to 2011 and making new goals and plans.
