Gratitude December, Day 4


Hi friends and fellow bloggers. 

I didn't mention it previously but I am spending a few moments each day to reflect on one thing I am grateful for that day. Of course there is usually more than 1 thing, both big and small that I am grateful for each day but I want to try and focus on one thing.  I didn't post for Day 2 and 3 so I will do that separately. I'm not yet decided whether I will post several days of gratitude in one or do a separate post for each day. We shall see but I will use the labels "grateful" and gratitude" to make them easy to search.

Today is Day 4 and I thankful for a phone call from the daughter of my childhood Sunday School teacher. My former was such a wonderful, loving and kind person. She is now well into her 90s and developed dementia a few years ago.  She is now in a care home but her son and daughter visit her almost daily. After their mother developed dementia, the daughter and the son would bring her south for a holiday each summer and they would make a point of visiting various people including myself and my late mom when she was in a care home too. 

Such a blessing this family entire family is to so many people. The example of their mother and father, stalwarts of the church and kindness and love exemplified, helped me to become the person I am today. My spiritual fruits still have a long way to go to ripen as well as theirs but honestly their example still encourages me to this day.

Here is the basis on which I love to give gratitude in all things. It's been my daily practice for long though I don't always write it down.

 "Rejoice always, pray without ceasing, give thanks in all circumstances; for this is the will of God in Christ Jesus for you." 1 Thessalonians 5:8

Thankful


It is Thanksgiving here in Canada and I want to wish my Canadian readers a Happy Thanksgiving.

I'm grateful to have an officially sanctioned time each year to to pause the ordinary course of events and reflect on the goodness of God and the blessings in my life.

Of course one doesn't need to wait and give thanks only once per year. I try to do that on a frequent basis but it is still nice to have one holiday called Thanksgiving. Even more so if one knows the purpose of the holiday.

Life comes with it's share of sorrows, trials and tribulations and it can make some people very bitter.

But there are also times of  joy and happy moments. Daily too there are little things that give our lives added beauty, joy and meaning and put a smile on our faces if we let them..  As a person with an abiding faith I also hold on to the scripture that says 

"And we know that all things work together for good to them that love God, to them who are the called according to his purpose." Romans 8:28

No matter what happens I feel that God will work it out in the end if I just trust Him.
Things always happen for a reason and sometimes we do not know what those reasons are in the moment.
Only later can we look back with greater clarity and understanding.

I am grateful for so many things, large and small.
Sometimes I just need to stop and think hard about what those things are. Sometimes we lose sight of the goodness and the blessings when everything is not going the way it should or the way we would like.  Those are the times when it is even more important to consider how blessed we really are.

I'm grateful for living in a beautiful city and having beautiful places to visit, either alone or with friends.
On the day of these photos, my friend invited me to Granville Island after stopping a very nice place for coffee in another part of town. But on other days, I have visited alone and still have a wonderful time having coffee or lunch, buying fruits and vegetables and people watching.

I'm always awestruck by the beautiful scenery at the waterfront no matter what part of the waterfront I happen to be visiting in this city.

This day it was rather quiet at Granville Island. It is a long weekend, Thanksgiving weekend.  I  suspect many people have left the City to be with family and loved ones.


I am grateful I have family and loved ones too.

Though my family is small, I love them dearly.
I am grateful that though my elderly mom is sick she is still here and I can talk to her each day.
I pray daily for her many needs:  for compassionate and helpful caregivers and that God would help her memory which is starting to fade, relieve her pain and help her in every way.

I am also grateful that this Thanksgiving, I have loved ones who will join me for Thanksgiving Dinner and that I can still make the odd large meal though I don't cook one nearly so often.   Even if I couldn't we would still gather and dine on rotisserie chicken and other fixings. 
The important thing is just to be together.


On the day I visited Granville Island there was a break in the weather and the sun came out. That may seem like a small thing too.  But it is the little things that add up to make pleasant days and beautiful weeks and months and years if we take the time to appreciate them.

We will have a few sunny days this week. I'm grateful for that too because it won't be too long before the winter rains come.

Bridges is a very popular restaurant on the Island. They have large deck on the other side where you can sit and enjoy the view.

There are so many more things for which I am grateful but I won't enumerate them all.
Mainly I wanted to share these photos that I took a few days ago.

Thanksgiving Dinner

 Let us come before him with thanksgiving and extol him with music and song. For the LORD is the great God, the great King above all gods.

Main ingredients for the kale salad
Cooked quinoa
The salad is assembled with the steamed kale, the cooked quinoa, the cranberries, pumpkin seeds and dressing
Mashed cauliflower
Cauliflower with shredded cheese ready for the oven
Baked cauliflower and cheese ready to eat
Rosemary, garlic roasted chicken

After releasing the spring, it was obvious that the mousse did not set. We ate it anyway and it was good ;-)

The Thanksgiving Dinner was a success. It was the first time I've tried three of the dishes: the kale salad with quinoa and cranberries, the mashed cauliflower and cheese bake and the pumpkin pie mousse.  Everything was quite delicious and you can find all the recipes at my post here.  I could not eat the main part of my chicken so I wll save it for tomorrow's lunch. Needless to say there is a lot of mousse pie left. I would recommend making the pie when you have company because it is very, very filling.

The only problem with the dinner was when we went to eat the pumpkin mousse pie I discovered it wasn't set properly.

After reflection I realized that my little package of gelatin had about 1 teaspoon of gelatin rather than the 2 tablespoons required.  That would explain why it wasn't set properly! Nonetheless the filling was so good. I also ended up having to make my own graham wafer pie crust as there were none today in the grocery store. It was the first time I've made it and it was relatively simple.

If you are in Canada, I hope you had a wonderful Thanksgiving and that you had a moment or two to reflect on those things for which you can give thanks. Mom's Friend, Jean

Mom has a good friend with the same given name "Jean".  They have been friends for many years now.  Jean was actually the pastor's wife at the little church where I went to Sunday School as a child. Her husband was a school bus driver who pastored the small church where I was allowed to attend on Sundays and during the week even though my family were not Christian.

I loved that church. I loved going to Sunday School and learning scripture verses. I especially enjoyed Christmas and the re-enactment of the biblical story of Jesus' birth. Jean's son would faithfully arrive at our  home several times each week to take my siblings and I to church services and functions.  Once or twice a year, my mother would attend church too and "pretend" she was a Christian. We laugh about it years later when mom realized she wasn't fooling anyone but herself.  Yet everyone was so gracious and loving toward her.




After we moved away from that small town and the "little church" as I like to call it, the pastor and his wife Jean moved to Alberta, the province next door.  A few years later he died of a heart attack.  His wife and only daughter, the youngest of the children,  have been living together ever since. I've never seen them since I was a child but my mother and Jean have kept in touch over the years, especially after mom became a Christian and a widow herself.


I wanted a pink brooch for Jean but didn't find exactly what I was looking for. This pin was the closest I could come to finding what I wanted. I think the addition of the pearls matches nicely with the winter white pashmina shawl.


Through the years the two women have remained firm friends, seeking each other out for heart to heart conversations and for prayer for family and health needs.Jean is about 10 years older than mom.   Mom's health has steadily declined in recent years and not too long ago mom asked me to help her buy something for her friend, Jean. Of course I readily agreed.

After some reflection of Jean's age and limited needs, I decided upon a nice shawl and pin which Jean could wear to church.  She could also wear the shawl around the house if she feels a child.  Since I was buying a gift for mom's friend. I also bought something similar for mom.  She can wear them when she attends church services at the residence where she now lives.



You can't really tell but the shawl does match with graduated rose and plum colours which are picked up in the crystals.


My mother and Jean enjoying a long and wonderful friendship has been a comfort to me.  Over the years they have confided in one another and prayed with one another through many health episodes and other challenges.  As Jean advances in age and increasingly gets sick herself, my thoughts turn to her and her daughter and I offer prayers for their needs too.


In this year's Thanksgiving remembrance, 
I give thanks for my mom's enduring friendship which has not only blessed my mother,
but the entire family.

Thanksgiving Goodies

It is Thanksgiving weekend here in Canada and we celebrate Thanksgiving on Monday, October 10, 2011.  I was wondering what to make that would be healthy.

Most of my lovely readers know that I've been trying to eat healthier and find different and fun recipes for using vegetables and other healthy foods. Creative and interesting ways of eating these foods means I will be more likely to eat them.

In my family we tend to eat turkey for the Thanksgiving meal. This year we will have a stuffed chicken. For dessert we will probably have pumpkin pie or maybe a pumpkin mousse pie.  For mashed potatoes I thought I would  make mashed cauliflower (mock mashed potatos) for a change and I'd like to try this new recipe for kale salad. I haven't cooked the dinner yet and probably won't until Monday so I am having to use other photos (with proper credit given). I wanted to share the recipes with you in case you want to use any of them.

The first recipe comes from nutritionist, Julie Daniluk, host of Healthy Gourmet, a reality cooking show.  The other recipes I picked up here and there.  Ms. Daniluk's  first book, Meals that Heal Inflammation is soon to be published and I understand it will advise on allergy free foods that both taste great and help the body's healing process.



THANKGIVING KALE SALAD

Ingredients:
1 cup quinoa (yields 4 cooked cups)
2 1/2 cups water, divided
8 cups kale (yields 4 steamed cups), stems removed, cut into ribbons
1/2 cup pumpkin seeds
1/2 cup dried cranberries (juice-sweetened)

Dressing:
1/4 cup pumpkin seed butter (use almond butter if you can't find pumpkin)
1/4 cup apple cider
1/2 lemon, juiced
1/2 tsp salt (reduce if needed)

Directions:


1. Place quinoa and 1.5 cups of water into a medium pot. Bring to a boil, reduce heat, then simmer for 15 minutes. Remove from heat for five minutes, then fluff with a fork. Let cool.

2. Place kale and 1 cup water in a large pot and steam for two minutes. Drain well.

3. Place cooked quinoa into kale pot. Add seeds and berries. Mix well to combine.

4. Mix all dressing ingredients together in a bowl and add to pot.

5. Combine well. Serve warm immediately or chill and serve.

Makes nine cups.

Modifications:  Since there will only be two of us for Thanksgiving dinner, I will quarter this recipe. I also plan to use almond butter rather than pumpkin seed butter as that is what I could find at the shop yesterday.

For my readers in Africa or for those who don't have quinoa readily available you could use cous cous, bulgar wheat, cracked wheat, or barley.  For the pumpkin seed butter you could substitute smooth peanut butter in the dressing recipe and use any kind of seeds (pumpkin, sliced almonds, peanuts, cashews, etc.) in the salad itself.

CAULIFLOWER "MASHED" POTATOES 

1 head cauliflower
1/8 skim milk
Salt & pepper
Optional seasonings: Ranch dressing, garlic, cheddar cheese, chili powder.
 
Cook cauliflower until fork tender. Place cauliflower (in pieces), skim milk, salt and pepper in blender. Whip until smooth. Pour cauliflower into small baking dish. Sprinkle with seasoning to taste. A few shakes of Ranch dressing powder,  or add garlic, salt and pepper, cheddar cheese, or a dash of chili powder. Serve hot/warm.


PUMPKIN MOUSSE PIE


1 graham wafer pie crust
2 tbsp. gelatin powder
1 cup water
1 cup whipping cream
1 can (19 oz). pumpkin pie filling
1 cup walnuts
1 cup mascarpone cheese
1/2 cup honey
1 tsp. cinnamon
1/2 nutmeg

Sprinkle gelatin in 1/2 water.  Boil remaining water, add to gelatin and stir until dissolved. In a separate bowl, whip whipping cream until stiff peaks form; set aside.

In a large bowl, combine pumpkin pie filling, walnuts, mascarpone, honey, cinnamon and nutmeg, stir well.   If you don't have mascarpone cheese you can use creme fraiche or cream cheese beaten with heavy whipping cream (about 3 parts cream cheese and 1 part whipping cream). Perhaps you could even use thick, plain yogurt. I think I will look use the yogurt myself.  Add gelatin. fold in whipped cream until combined and pour mousse into the ready made graham wafer pie crust. Gently shake the pie pan to release the air bubble and smooth out the surface.


 I hope  you enjoy these Thanksgiving meal recipes.
 It is a good time to reflect on all the many blessings we have at this time of year, especially the things we may take for granted.  For example, parents or loved one, a job or some means of financial support, shelter, food, the ability to walk, see, hear, etc. I am thankful for all these things and more especially since my ability to walk has been recently restricted.

Give Thanks

I want to give thanks for the prayers of faithful people and to God for looking after my mom these past two weeks in hospital. She was discharged from hospital on Tuesday afternoon (April 26, 2011).

She was in a bad way and we almost lost her two weeks ago from a bad infection. She pulled through though and is slowly gaining strength. She has been in hospital so often this past year that is it a wonder she is still with us. I know that given this backdrop her time may be limited so I am happy she is with us yet and I pray she can get stronger and enjoy some time yet with us for as long as possible.

I barely managed to plant some seedlings and bedding plants when I had to travel suddenly to see mom.
I hope to be going home by Friday and tend my garden.  I also hope to catch up on visiting your blogs :-)

Today I am Thankful

Today I am thankful for:

* a mom who though ill is still with us
* a brother who tries to help though he has a lot to learn
* friends and relatives who care
* the Canadian medical system
* books to read
* a God who loves
* a home
* food
* interests outside the home
* faith
* hope
* love
* a shower
* music
* internet
* green grass
* clean laundry
* sunshine and the rain
* natural beauty all around me
* rest

There are so many things to be grateful for and this list is just but a few of them.   My list is not in order of importance, just listed as they came to me. I am celebrating Canadian Thanksgiving today with the traditional turkey, mashed potatoes, a stock reduction instead of the usual gravy and pumpkin pie.

I haven't stopped often enough to give thanks but today I did just that during this Thanksgiving Day in Canada. I pray you also have much to be thankful for both this day and every day.

A Message of Hope

I wanted to share with you the exciting project Pastor Jonah has been busily involved in in Kenya. Here is a report he recently sent me and posted on his blog.

Vacation Bible School (VBS) is here again. We have been busy working to prepare the materials for over two months now. Praise God they are ready for distribution!

Here is the desk where I've been working at the computer writing these books.

We are going to have over 500 teaching centers and over 10,000 kids will be learning about Christ through these booklets. We also hope to reach some rehabilitation boys in VBS in a few weeks with these teachings and the message of hope.

Please pray for us as we continue to distribute these books. It is a difficult work and we do hope we will make it.

A Simple Bar of Soap

It is good to give thanks to the Lord,

Most people don't really think about what a luxury it is to be able to have a bar of soap.

In Kenya, many of the villagers are unable to even buy bar soap or other things like toilet paper; things that we consider the daily necessities of life. This is one of many reasons why I am passionate about helping the Missions of Hope.

Today before I take my bath, I am grateful that I have a bar of soap. One that smells nice and has a rich later to soothe my dry skin. What will make you give thanks today?

Today I am Thankful For....


... a number of answered prayers.

Give thanks unto the LORD, call upon his name, make known his deeds among the people.

News that my friend Pastor Jonah has obtained a visa for his first trip to South Africa to participate in a conference for emerging leaders in Africa. Pastor Jonah is a very humble servant of the Lord and he has a great heart for evangelizing the youth. I feel that God wants to bless him with this opportunity to go to South Africa. I've been praying for this trip. So today you can imagine how excited I was when I learned that he has just obtained a visa. This means that the trip is closer to a reality.

A nice chat with Enock, a Kenyan student friend of mine who I haven't heard from in some time. He is back in college after a school break. That in itself is good news, but even better was the news that he received a generous financial gift from one of his papa's friends to help him enroll in college this term. God is so awesome!

My own mama has been needing a new apartment for the physically disabled. She has finally gotten a call to go and see one today. Praise God!

Listening to Reverend Faisal Malick's sermon on-line. If you've never heard him you will be blessed. He is a converted Muslim who is now being used to reach Muslims and others for the Lord. He and his wife, Sabina make a dynamic duo for the Lord.


Watching Pastor Len Paxton's tangle video "The Cross & The Holy Spirit". It is a message full of truth, dynamism and helps. Pastor Len heads the Acts 26:18 Ministry.

If you are into praying, I have a number of requests to share:

I pray that Pastor Jonah will have all the funds he needs and more, to make the trip to South Africa less stressful. It is always hard to plan to go far away when you have little in the way of means to meet your needs. Please pray along with me as Lord willing, the trip will happen in early June 2009.

Please pray for Enock's funds to complete his education on time. Brother Enock daily faces challenges that many college students in the developed world will never have to face or even imagine. This is true of many students in Africa, including Kenya. He is studying business administration at a Bible college and when he is finished, his dream is to go onto higher learning in North America.

Pray for my mama. Pray that God would clearly let her know if the home she saw today is the home that God wants for her, or that we will soon know to which home she will be able to move. Also, that she will have more than enough help for the move. There are particular challenges she faces in finding just the "right" home and in the timing of the move. God knows and cares about each one of these challenges.

Protection and anointing for Reverend Faisal and his wife, Sabina, and for Reverend Len and his wife, Angie as they carry out the work of God for the Kingdom. These two couples are dynamic duos spreading the truth of the gospel to the nations.
